SUGAR-FREE VEGAN PUMPKIN DONUTS

Autumn is in the air and so is everything pumpkin spice.  I love pumpkin spice and in this recipe, you don’t have to sacrifice healthy habits for that scrumptious taste.

This recipe is simple and so much fun to make with your children. Get them involved and infuse these delicious donuts with love. I hope you enjoy!

INGREDIENTS :

  • 2 cups almond flour
  • teaspoons baking powder
  • teaspoon baking soda
  • 2 1/2 teaspoons pumpkin spice (or to taste) 
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup swerve
  • 2 tablespoons ground flaxseed + 5 tablespoons water (vegan flax egg)
  • 3 tablespoons melted vegan butter
  • 1 1/2 teaspoons vanilla extract
  • 3/4 cup non-dairy milk (I used unsweetened coconut milk) 
  • 1/4 cup applesauce
  • 3/4 cup pumpkin puree

DIRECTIONS:

  • Preheat oven to 350 degrees F.
  • Lightly grease the slots of two donut pans.
  • Prepare flax eggs in a small bowl, by mixing together the ground flaxseed & water. Set aside about 5 minutes. It will thicken up and become gel-like.
  • Combine first wet ingredients, mix, then add dry ingredients
  • Stir well. The batter should be thick, but if it’s too dry & thick to stir, add 1-2 tablespoons of plant milk until desired texture.
  • Using a spoon add your batter to a large Ziploc, Twist the top closed and snip off one corner leaving a 1/2 ” hole. Or you can just scoop in the batter.
  • Fill about 3/4ths of the way full.
  • Place in the oven for 12 minutes. They cook fast so keep an eye on them. To see if they are complete, lightly press the surface. It should spring back.
  • Remove the pans from the oven and let them cool for 5 minutes before touching. Now gently remove the donuts and let them cool on a cooling rack for 10 minutes.
  • Gather your children, pour some almond milk for dipping, a dash of agave for frosting, and ENJOY!
